Step 1

To make the batata vada, heat some oil in a pan. Add curry leaves, mustard seeds and ginger garlic paste to it.

Step 2

Then add turmeric, hing, red chilli powder, and a splash of water. Now mix in the boiled, mashed potatoes, fresh coriander and salt.

Step 3

Make small potato balls once the stuffing cools down.

Step 4

In a large bowl, mix together besan, rice flour, hing, turmeric, red chilli powder and salt. Add water and make a thick batter with it.

Step 5

Dip the potato balls in the besan batter and fry them on a medium flame. Once they turn golden brown, remove them and set them aside.

Step 6

To make the special masala, roast dry red chillies and garlic cloves. Then, roast grated coconut and peanuts separately. Blend them all to make powder, and add salt.

Step 7

Now, take the bread pavs and apply green chutney and tamarind chutney on both sides. Put special masala on one side and place batata vada and fried green chilli on it.

Step 8
