Take all your favourite veggies and rinse them. Cut the veggies into small pieces and boil them.
Dry roast coriander, cumin seeds, cloves, fennel seeds, dry red chillies, cardamom and cinnamon sticks for 3-4 minutes. Grind them into a masala.
Heat some oil in a pan. Add cumin seeds, asafoetida, ginger garlic paste and chopped onions to it.
Add tomatoes, salt, turmeric powder, amchur, grated ginger, black salt and a little water to the pan. Saute it well.
Add the remaining veggies to the pan. Then add the special pav bhaji masala, red chilli powder, fenugreek powder, salt and a little sugar. Cover the pan and let it cook.
Mash all the ingredients and add some water to the pan. Let it cook for a while.
Until then, place butter on the tawa and sprinkle some pav bhaji masala on it. Toast the bread pav on it until golden brown.
Serve the yummy street-style Pav Bhaji with butter, chopped onion, half-cut lemon and fresh cilantro.
