Take a bowl and add maida, baking powder, baking soda, sugar, and salt to it. Then mix it well.
Now add fresh curd and a little water to it. Knead a sticky and smooth dough with it.
To make the stuffing, mix mashed potatoes/paneer, chopped onion, chillies, cumin, coriander, amchur, garam masala, ajwain, black salt, sale, ginger garlic paste in a bowl.
Make small balls with the dough and dust maida on them. Roll them in a circular shape.
Brush some water on the top. Sprinkle kalonji, sesame, coriander and chilli powder on the kulchas.
Heat the tawa and sprinkle a little water on it. Then place the kulcha on the tawa and cook it directly with the flame.
After a minute, flip the kulcha and cook it normally on the tawa till it turn golden brown.
Brush some butter on the top and serve the delicious Amritsari Kucha with chole or chutney.
