1 tbsp oil, chopped onion, Green Chilli, 2 tsp Jaggery, Tamarind pulp, Coriander Leaves, 10 no Shallots, Cumin Seeds, ½ tsp Asafoetida, Dry Red Chilli, and Sambar Powder.
Your first step is to cook dal and add some turmeric powder and pressure cook for 3 to 4 whistles. Open the cooker and mash the dal. Keep it aside!
Now, heat ghee or oil in a pot and then, add chopped onions, tomatoes and slit green chillies. After 2 mins, add chopped mixed vegetables and cover it with water.
It’s time to add salt, bring it to boil, cover the pot with lid, and cook on medium heat. After cooking vegetables, you can add toor dal.
Add and mix the following ingredients: sambar powder, tamarind pulp, salt and jaggery. To temper sambar, add mustard seeds, urad dal and cumin seeds. Wait for a second for sizzling.
Next is to add broken dry red chillies, asafoetida and curry leaves in a hot oil and mix it properly. You can now pour it into the sambar and mix.
Now, add chopped coriander leaves into the sambar and mix well. Serve this tasty Sambar with Idli or Masala dosa.
