Heat some ghee or oil in a deep base pan.
Add bay leaf, cloves, cinnamon and cumin in the pan.
Add some onions and saute for a while. Then add some ginger garlic paste as well.
Now add chopped tomatoes, turmeric, red chilli powder, garam masala, and salt to the pan. Cook until the tomatoes turn mushy.
Add some water to the pan and boil for 3-4 times.
Now add soaked white rice to the pan. Cover the lid and let it cook on medium heat.
Garnish with lemon juice and fresh coriander. Super delicious tomato rice is hot and ready to be served.
