Add the leftover rice to a bowl. You can also prepare a fresh batch of steamed white rice.
Mix fresh curd with the rice until they are well soaked.
Take a pan and add some desi ghee or oil. Add asafoetida (hing), cumin seeds, mustard seeds, urad dal, curry leaves, and red chillies to it.
You can also add chopped tomatoes and soybean chunks like I do. Let it roast for 2-3 minutes.
Add the tempering on top of the curd rice mix. Enjoy the delightful meal anytime you want.
