Step 1

Boil potatoes and beetroots separately until they become soft.

Step 2

For the chutney, add coriander leaves, garlic, roasted peanuts, black pepper, green chillies, cumin powder and chaat masala to a blender.

Step 3

Add a little water if needed and make a smooth green chutney.

Step 4

Now slice boiled potatoes and beetroots, tomatoes, cucumber, capsicum, onions and carrots.

Step 5

Take bread slices and cut off the edges.

Step 6

Generously spread butter on one slice of bread and green chutney on the other slice.

Step 7

Now place the sliced vegetables on a slice of bread and sprinkle some chaat masala on top. Cover it with the other bread slice.

Step 8

You can grill the delicious Bombay sandwich or enjoy as it is. You can also garnish it with sev or cheese.
