Khandvi Recipe: Roll Up Some Love, Gujarati Style!

Ingredients

½ cup Besan, ¼ teaspoon Turmeric powder, Ginger paste, a pinch Hing, Plain yogurt, ¾ cup Water, Mustard seeds, Curry leaves, 1 ½ tablespoons Oil, desiccated coconut, and coriander leaves.

Step 1

First is to grease aluminum foil with oil and keep it aside. Now, shift the besan in a bowl and add salt, hing, turmeric powder and ginger paste. Mix everything!

Step 2

Next is to add sour yogurt and mix it using a wire whisk! You can now add a little water to make lump free batter.

Step 3

Pour this batter to a heavy bottom Pan and turn the heat to low. Make sure to cook it till it gets thick. Spread the batter on prepared foil!

Step 4

Wait for 2-3 minutes to let it be cool. Start making straight cuts using a knife and make about 1 ½ inch wide strips. Now, roll each strip into a roll.

Step 5

After this, heat the oil in a small pan on medium heat. Add mustard seeds, cumin seeds, and sesame seeds. Now, add green chilies and curry leaves. Turn off the stove.

Step 6

Garnish with shredded coconut and chopped cilantro. Enjoy your Khandvi!
